Gluten Free Rice Veggie Pasta SaladGluten Free Rice Veggie Pasta Salad
A light, healthy recipe for those with gluten sensitivities or celiac disease. This veggie pasta is incredibly simple to prepare, giving you more time to enjoy the patio weather while summer lasts.
Ingredients
1 pkg Prairie Harvest San Zenone rice pasta fusilli (or any short pasta) 1 clove garlic, chopped 1 small bunch fresh asparagus, break off ends and cut into small segments 1 can baby corn, cut in half 1 fresh zucchini, cut into small cubes 1 fresh sweet pepper, cut into small cubes 1 green onion, chopped 3 tbsp lemon juice 1 tbsp lemon zest 2 tbsp chopped chives 2 tbsp chopped fresh basil 200g cheddar cheese, shredded (optional) 1 bottle (236 ml) herbs de Provence or any gluten-free salad dressing of your choice
Directions
1. Fill one large pot with water and bring to a boil. Add pasta and cook uncovered until just tender. Drain, rinse under cold water and set aside.
2. Using a medium-sized pot, either blanch (boil quickly until you see the asparagus turn bright green) or steam asparagus until just tender.
3. In a large bowl, combine all ingredients and mix. Cover and chill for 1 hour to let flavours mix together.
