Veggie Turmeric Curry

Directions

  1. On medium heat, add coconut oil to a large saucepan or pot.
  2. Add the onion, garlic, ginger, carrot, broccoli, and red peppers stirring frequently, until tender (about 5 minutes)
  3. Add the Earth’s Choice turmeric paste, veggie broth, and coconut milk. Bring to a low simmer, reduce heat slightly and cook for an additional ten minutes.
  4. Taste and adjust seasonings. Add black pepper or sea salt to taste.
  5. Serve over your base of choice (see in ingredients list above).
  6. Top with fresh arugula
