Avocado Salad with Warm Sesame Vinaigrette

The avocado in this salad adds calories, giving you a “fuller” feeling after eating it. The sesame seeds also provide some protein and calcium. This is an excellent salad in which to add roasted walnuts or almonds, and citrus fruits go well with spinach. Spinach is very high in antioxidants and minerals and contains more beta-carotene than broccoli.


Wash the spinach and lettuce and tear into bite size pieces. Place in a large serving bowl. Peel and slice the avocados and place on top of the leaves. In a small skillet, lightly toast the sesame seeds on low heat, add the oil, mustard and lemon juice and stir until warm. Pour (while warm) over the salad and serve immediately.
