Buffalo Mozzarella Caprese and Grilled Zucchini

Buffalo Mozzarella Caprese and Grilled Zucchini

Directions

Cut off the tops of the zucchini and slice in half lengthwise. On a heated outdoor or indoor grill, place zucchini face down. Grill for a few moments until grill lines appear, flip and repeat. Set aside to cool then dice.

Chop up all vegetables, mozzarella and basil and place in a large salad bowl. Pour over remaining ingredients and toss.
