Ingredients
6 medium ripe cubed Tomatos
1 bunch roughly chopped Basil
1 small can Artichoke hearts
200 g Bocconcini pearls
1 head Fresh garlic
1 Lemon
50 ml Extra virgin olive oil
25 ml Balsamic vinegar
25 ml tapenade (black olive paste)
Sea salt and pepper to taste
Directions

Cut top off head of garlic, lightly brush with olive oil, wrap in foil, and cook for 25 minutes at 375° F. Allow garlic to cool a bit, squeeze out of peel and mash with lemon juice, olive oil, balsamic vinegar, black olive paste and sea salt to make dressing. Combine with remaining ingredients in large bowl and serve.
