Preheat oven to 380°F. In a roasting pan, spread out the olive, onions and garlic. Add the rest of the vegetables and sea salt. Toss to coat, cover the pan and roast for 20 minutes. After 20 minutes, remove the cover and roast for 10 minutes more.
Remove vegetables from the oven and pour in the Sunflower Kitchen Hummus. Mix and coat all vegetables. Sprinkle with fresh parsley and enjoy.
